Can I add a worker without an email address to a Daywork Sheet?

Yes. You can Add New Workers on Daywork Sheets from inside the Labour section of a Daywork Sheet or inside of the Crews tool if you have the 'Create Contacts' granular permission enabled or 'Admin' permissions on the Project's Directory tool, see Grant Granular Permissions in a Project Permissions Template.
